My First Post!


So on this cold, wet, rainy night I decided I would start a blog!! It took me way too long to figure the dang thing out too. Those of you who read this will know i've been MIA for a while life is super busy right now! Where to start... lots has happened this past month and a bit it's crazy! First and foremost my Bestie got married. Somehow since then things have dramatically changed as i've realized were all grown up now, moving on and starting lives of our own. ….School’s done and I’m officially a GRADUATE NURSE! FINALLY!! Just when I think the big decisions in my life were over I realized they are all just beginning. 2010 is no doubt a year of big changes and as sad as it is the only certain thing in life is change. Learning to share my Bestie was one of the biggest changes, graduating university and in my near future….Moving out, choosing what city to live in, where to work and if I want to travel are just a few of the crazy decisions that keep me up long into the night along with writing my Canadian Registered Nursing Exam on June 2nd!!!

Here's just one of the many crazy little adventures of the week.....

So it was mine and Ben's six month this week and I find this on my door step which I was super excited about.....
Until the box started to move.... this is when I naturally freaked out and threw the box outside. Not knowing what it was I didn't wanna get bit.
This little sucker popped out and was not the least bit impressed with me... as you can tell.

But on a more serious note it's hard to believe it's been six months already.

The Osmond's have sure taught this city girl a thing or two about Country Life. But although I hated farming and anything country i'm secretly starting to love it all....I find myself actually enjoying country music where up to now I totally despised other then T Swift and Carrie Underwood. But "Big Green Tractor" & "The Pants" are two of my new fav's!I’ve also learned how to not be afraid to get a little dirt under my nails and have gained a new appreciation for hot showers after helping out on the farm. It’s also been quite fortunate Linda knows how to get any grease stain or animal substance out of clothing I tell ya. I’ve also really enjoyed my new GUM Boots for the farm


... who said you can't be fashionable on the farm:) I’ve also milked my first cow and saw my first sheep and learned how to weld just to name a few… I know I know I’ve been sheltered OK!

This One's For You Ames!!


White Chocolate Macadamia Nut Cookies
2 cup salted butter
1 2/3 cups brown sugar, packed
1 cup granulated sugar
3 large eggs, room temperature
1 tablespoon vanilla extract
4 1/4 cups all purpose white flour
2 teaspoons baking soda
1 teaspoon salt
2 cups white chocolate chips or chunks (high quality chocolate is highly recommended)
1 1/4 cups macadamia nuts, coarsely chopped

Directions:
1) Preheat oven to 350 degrees.
2) Line baking sheet with aluminum or parchment paper.
3) Measure flour, baking soda, and salt in a large bowl and blend together. Set aside.
4) In a large bowl, beat butter until creamy.
5) Add brown sugar and beat again. Add granulated sugar and beat until fluffy.
6) Add one egg at a time, beating after each addition.
7) Add vanilla and beat again.
8) Add flour mixture 2 cups at a time and mix well.
9) Mix in white chocolate and macadamia nuts until blended.
10) Using a cookie scoop, place dough on prepared baking sheets.
11) Bake at 350 degrees for ten minutes or until lightly brown at edges. DO NOT OVER BAKE WATCH CLOSELY!

This recipe makes a LARGE batch of 60 + cookies. Divide the recipe in half if needed. ENJOY!
